Course Overview
Tasmania is a beautiful island of Australia that is world famous for its gourmet food. As a leader in hospitality training, we have designed a specialised Commercial Cookery course to prepare students for a rewarding and prosperous career in the hospitality industry.
This qualification demonstrates diverse skills and knowledge in Hospitality and Cookery Management. Advanced units include: finance, sustainability and managing human resources. Our course focuses on a simulated workplace experience and is delivered by highly qualified teachers. Students will train alongside highly experienced professional chefs in fully equipped kitchens and will have the opportunity to gain further workplace skills by completing placements with our industry partners.

This qualification provides the skills and the knowledge for an individual to be competent as a qualified cook. Course Structure
The Diploma of Hospitality Management (Commercial Cookery) package is comprised of three qualifications, for a total of two years study:
- Certificate III in Commercial Cookery (1 year)
- Certificate IV in Commercial Cookery (6 months)
- Diploma of Hospitality Management (6 months)
Pathway to University
Students who complete the Diploma of Hospitality Management (Commercial Cookery) package at TasTAFE can enter the Bachelor of Business (Hospitality) at the University of Tasmania with one year of credit. Students can therefore complete Diploma and Bachelor qualifications with 4 years of study (2 + 2).
